In the past, I shared a post about my current love affair with herbs and a few of the benefits they offer, so I thought it only made sense to share a few of my favorite recipes that use herbs as well.
Today’s recipe is really more so a combination than a recipe, and it makes an appearance all summer long on our dinner table. It’s quick to assemble and showcases some of the best flavors of summer. If you like mint, you will love this.
I grew watermelon for the first time this past summer which made this combo even more exciting to snack on. There’s just something so special about homegrown food!

Watermelon-Mint-Lime Salad
A quick and easy salad to wake up your summer senses.
Ingredients
- small watermelon
- 8 mint leaves
- juice of half a lime
Instructions

Cut the watermelon into bite-size cubes. Chop the mint leaves and combine with the watermelon. Drizzle the lime juice over the watermelon and mint. Taste to see if you'd like more of any ingredient. Refrigerate for at least 30 minutes to let the flavors meld. ENJOY!
