The only thing more exciting than growing a new plant in the garden is preparing meals with the edible parts: flowers, leaves, roots, etc. This spring I am growing borage for the first time. I found out about it last fall while researching edible flowers to grow in the garden.
It has turned out to be a quick favorite. The flowers are a star-shaped vibrant blue that stand out in the garden, and the plant is growing tall rapidly.
I have harvested the flowers and placed them in ice cube trays for an upcoming baby shower I am hosting for a baby boy! Yes, I am beside myself at how fun this is because using them in ways such as thisย is exactly why I wanted to grow edible flowers in the first place.
As far as the leaves go, we have, so far, used the delicious, cucumber-like leaves in salads, soups, coleslaw and now a smoothie! Here’s the recipe for you to enjoy.
