Mango-Coconut Smoothie with Edible Borage Flowers

The only thing more exciting than growing a new plant in the garden is preparing meals with the edible parts: flowers, leaves, roots, etc. This spring I am growing borage for the first time. I found out about it last fall while researching edible flowers to grow in the garden.

It has turned out to be a quick favorite. The flowers are a star-shaped vibrant blue that stand out in the garden, and the plant is growing tall rapidly.

I have harvested the flowers and placed them in ice cube trays for an upcoming baby shower I am hosting for a baby boy! Yes, I am beside myself at how fun this is because using them in ways such as this is exactly why I wanted to grow edible flowers in the first place.

As far as the leaves go, we have, so far, used the delicious, cucumber-like leaves in salads, soups, coleslaw and now a smoothie! Here’s the recipe for you to enjoy.

Mango-Coconut Smoothie with Edible Borage Flowers

A refreshing summer smoothie with easy to grow borage flowers blended with mango and coconut.

Servings 1 smoothie

Ingredients

  • 1 cup mango
  • 1 cup coconut milk
  • 1 tbsp collagen
  • 1 medium or large-sized borage leaf
  • 1 tbsp chopped fresh mint
  • 1 borage flower for garnish (optional)

Instructions

  1. Place all ingredients into a blender and blend on slow speed. Add water to thin or ice to thicken. Enjoy as a refreshing drink on a cold, summer day.
